Alicante Bouchet &#8216; nin etli k\u0131sm\u0131 kabu\u011fu gibi k\u0131rm\u0131z\u0131d\u0131r. Bu nedenle \u015farapl\u0131k \u00fcz\u00fcmler aras\u0131nda ad\u0131 &#8220;boyac\u0131&#8221; olarak ge\u00e7mektedir. K\u0131rm\u0131z\u0131 meyve ve baharat aromalar\u0131 belirgin olan Alicante Bouchet koyu renkli, meyveli, orta asitli, olgun tanenli \u015faraplar verir. Meyveli ve baharatl\u0131 notalar i\u00e7erir.<\/p>\n\n\n\n<p><strong>Barburi:<\/strong> Antakya da yeti\u015ftirilen, koyuk\u0131rm\u0131z\u0131 renkli ve sek \u015farap veren bir \u00fcz\u00fcm t\u00fcr\u00fcd\u00fcr.  Meyvemsi olan \u015faraplar\u0131n\u0131n asiditesi ve taneni y\u00fcksektir ama ya\u015fland\u0131r\u0131lmaya m\u00fcsait de\u011fildir. Kabu\u011fu mor, i\u00e7i beyaz, yumu\u015fak, tatl\u0131, etli ve asitli bir \u00fcz\u00fcm \u00e7e\u015fidi oldu\u011fundan gen\u00e7 t\u00fcketilen kalitede \u015faraplar vermektedir.<\/p>\n\n\n\n<p><strong>Bo\u011fazkere:<\/strong> Diyarbak\u0131r, Elaz\u0131\u011f, Malatya ve Gaziantep\u2019te de yeti\u015fen k\u0131rm\u0131z\u0131 \u015farapl\u0131k \u00fcz\u00fcmd\u00fcr. \u00c7ok \u00e7ak\u0131ll\u0131, bazen kalkerli ve killi, k\u0131rm\u0131z\u0131 topraklarda yeti\u015fiyor. Anadolu yaylalar\u0131n\u0131 ay\u0131ran da\u011flar\u0131n hemen g\u00fcneyindeki Mezopotamya yaylas\u0131nda, F\u0131rat ve Dicle \u0131rmaklar\u0131n\u0131n aras\u0131ndaki b\u00f6lgede ya\u015fam\u0131n\u0131 s\u00fcrd\u00fcr\u00fcyor. K\u00fc\u00e7\u00fck taneli, koyu renkli, kal\u0131n kabuklu ve \u00e7ok tanenli bir t\u00fcr.A\u011f\u0131zda ve bo\u011fazda \u201cburukluk\u201d yaratmak anlam\u0131na gelen \u201cbogaz kermek\u201d s\u00f6z\u00fcnden gelir. K\u00fc\u00e7\u00fck, tanenli, koyu renkli, kal\u0131n kabuklu ve d\u00fc\u015f\u00fck asitlidir. Asidi d\u00fc\u015f\u00fck oldu\u011fu i\u00e7in y\u00fcksek asitli \u00fcz\u00fcmlerle de harmanlan\u0131r.<\/p>\n\n\n\n<p><strong>Cabernet Franc:<\/strong> En \u00e7ok ekilen t\u00fcrlerden biridir. Meyveleri k\u00fc\u00e7\u00fck, ince kabuklu ve mavi-siyah renktedir. \u00c7e\u015fitli toprak t\u00fcrlerine adapte olabilir ancak kire\u00e7li topraklarda daha kaliteli \u00fcr\u00fcn verir. Cabernet Sauvignon\u2019a g\u00f6re daha hafiftir ve \u015faraba incelik kazand\u0131r\u0131r. Genel olarak Cabernet Sauvignon\u2019a benzer ancak  \u00e7ok daha \u00f6nce olgunla\u015f\u0131r.<\/p>\n\n\n\n<p><strong>Cabernet Sauvignon:<\/strong> K\u00f6keni Fransa olan Cabernet Sauvignon \u00fcz\u00fcm\u00fc T\u00fcrkiye\u2019de genellikle  topra\u011f\u0131n killi, kumlu, az \u00e7ak\u0131ll\u0131 oldu\u011fu yerlerde yeti\u015ftiriliyor, daha iyi \u00fcr\u00fcn al\u0131nmas\u0131 i\u00e7in gerekli bir \u015fart. D\u00fcnyan\u0131n en \u00e7ok \u00fcretilen k\u0131rm\u0131z\u0131 \u015farap \u00fcz\u00fcmlerindendir. \u00dcz\u00fcmleri kal\u0131n kabuklu ve serttir. Do\u011fal olarak d\u00fc\u015f\u00fck verim g\u00f6sterir. Don, \u00e7\u00fcr\u00fcme ve b\u00f6ceklenme gibi tehlikelere kar\u015f\u0131 diren\u00e7lidir. Cabernet Sauvignon\u2019un tipik \u00f6zelli\u011fi, y\u00fcksek tanenli ve \u015farab\u0131n ya\u015flanmas\u0131na katk\u0131da bulunan belirgin asitli\u011fi ile tam g\u00f6vdeli \u015faraplar yap\u0131labilen \u00fcz\u00fcm olmas\u0131d\u0131r.<\/p>\n\n\n\n<p><strong>Carm\u00e9n\u00e8re:<\/strong> Fransa\u2019n\u0131n Bordeaux \u015fehrinde M\u00e9doc b\u00f6lgesinden \u00e7\u0131kma, koyu k\u0131rm\u0131z\u0131 \u015faraplar \u00fcretmek ve bazen de Petit Verdot ile harmanlamak amac\u0131yla kullan\u0131lan \u015farapl\u0131k bir \u00fcz\u00fcm \u00e7e\u015fididir.  Cabernet Sauvignon, Cabernet Franc, Merlot, Malbec ve Petit Verdot ile birlikte Carm\u00e9n\u00e8re, Bordeaux\u2019nun orijinal 6 k\u0131rm\u0131z\u0131 \u00fcz\u00fcm\u00fcnden biridir. Carm\u00e9n\u00e8re \u00fcz\u00fcm\u00fcn\u00fcn \u015farab\u0131 koyu k\u0131rm\u0131z\u0131 renkte olup, baharat ve k\u0131rm\u0131z\u0131 meyve aromalar\u0131na sahiptir. Cabernet Sauvignon\u2019a k\u0131yasla daha yumu\u015fak tanenli olup orta g\u00f6vdeli bir yap\u0131dad\u0131r. Y\u0131lland\u0131rmaktan ziyade gen\u00e7ken i\u00e7ilmelidir.<\/p>\n\n\n\n<p><strong>Cinsault:<\/strong> Bu k\u0131rm\u0131z\u0131 \u015farapl\u0131k \u00fcz\u00fcm, siyah renkte, elips bi\u00e7iminde ve orta b\u00fcy\u00fckl\u00fckte. Kabu\u011fu orta kal\u0131nl\u0131kta, aromas\u0131 tatl\u0131. Cinsault \u00fcz\u00fcm\u00fcnden elde edilen \u015faraplar\u0131n rengi canl\u0131 ve koyu k\u0131rm\u0131z\u0131. Bu \u00fcz\u00fcm, k\u0131rm\u0131z\u0131 meyveli, baharatl\u0131, kal\u0131c\u0131 ve g\u00f6vdeli \u015faraplar verir.<\/p>\n\n\n\n<p><strong>Carignan:<\/strong>&nbsp; K\u00f6keni g\u00fcney Fransa ve \u0130spanya olan k\u0131rm\u0131z\u0131  bir \u00fcz\u00fcm t\u00fcr\u00fcd\u00fcr. Ege\u2019nin yumu\u015fak ikliminde, \u0130zmir yak\u0131nlar\u0131nda, kumlu ve \u00e7ak\u0131ll\u0131 topraklarda yeti\u015ftiriliyor. Carignan \u00fcz\u00fcm\u00fcnden \u00fcretilen \u015faraplar meyveli, asitli ve g\u00f6vdelidir. Kupajlara (birka\u00e7 \u00e7e\u015fit \u00fcz\u00fcm\u00fcn birbiriyle kar\u0131\u015ft\u0131r\u0131lmas\u0131) g\u00fczel bir tat katar.<\/p>\n\n\n\n<p><strong>\u00c7al Karas\u0131:<\/strong> Ad\u0131n\u0131 Denizli\u2019nin \u00c7al il\u00e7esinden alm\u0131\u015ft\u0131r. K\u0131rm\u0131z\u0131 \u015farap \u00fcz\u00fcm\u00fc olmas\u0131na ra\u011fmen, az renk verdi\u011fi i\u00e7in genellikle rose \u015faraplarda tercih edilir. Etli ve sulu bir \u00fcz\u00fcm olup, g\u00fcl, kavun, dut ve ku\u015fburnu tatlar\u0131n\u0131 i\u00e7erir. \u00c7al karas\u0131 canl\u0131 bir renge sahip oldu\u011fu i\u00e7in yabanc\u0131 \u00fcz\u00fcm \u00e7e\u015fitleri ile kar\u0131\u015ft\u0131r\u0131ld\u0131\u011f\u0131nda kupaj\u0131n kalitesini y\u00fckseltmektedir. Olgunla\u015ft\u0131\u011f\u0131nda asiditesi \u00e7ok iyidir. Denizli y\u00f6resinde, az verimli, kumlu toprakl\u0131, 1200 metre y\u00fckseklikteki yaylalarda yeti\u015fir.<\/p>\n\n\n\n<p><strong>Gamay:<\/strong> Gamay alkali topraklarda \u00e7ok derin k\u00f6klenme e\u011filimi g\u00f6stermeyen b\u00fcy\u00fcme mevsimi boyunca \u00fcz\u00fcmlerde y\u00fcksek asitlik seviyesiyle bilinen \u00e7ok kuvvetli bir asmad\u0131r. Asitli\u011fi ile \u00e7ilek ve ahududular\u0131 and\u0131ran gen\u00e7 meyve ifadelerinin yan\u0131 s\u0131ra leylak ve menek\u015felerin notalar\u0131na da izin veren bir s\u00fcre\u00e7 olan karbonik maserasyon ile yumu\u015fat\u0131l\u0131r. Canl\u0131 k\u0131rm\u0131z\u0131 renkte, meyveli, yuvarlak, g\u00f6vdeli ve kal\u0131c\u0131 \u015faraplar verir.  Az ya\u015flanma sonras\u0131 i\u00e7ilmesi gereken \u015faraplar daha fazla g\u00f6vdeye sahip olma e\u011filimindedir ve tam tane maserasyonu ile yap\u0131l\u0131r. <\/p>\n\n\n\n<p><strong>Grenache:<\/strong>  \u0130spanya\u2019daki gibi kuru ve s\u0131cak r\u00fczgarl\u0131 iklime ihtiya\u00e7 duyar. Asma erken tomurcuklan\u0131r ancak ge\u00e7 olgunla\u015f\u0131r. Uzun olgunla\u015fma s\u00fcreci, \u00fcz\u00fcmdeki \u015fekerlerin y\u00fcksek seviyelere ula\u015fmas\u0131n\u0131 sa\u011flar, bu da Grenache bazl\u0131 \u015faraplar\u0131n alkol seviyesini  %15 ABV\u2019ye getirir. \u00dcz\u00fcm k\u00fcmelerinin s\u0131k olmas\u0131 nedeniyle \u00fcz\u00fcm demetinde \u00e7\u00fcr\u00fckl\u00fck ve t\u00fcyl\u00fc k\u00fcf gibi \u00e7e\u015fitli \u00fcz\u00fcm hastal\u0131klar\u0131na kar\u015f\u0131 hassast\u0131r. Bu \u00fcz\u00fcm\u00fcn \u015farab\u0131 genellikle baharatl\u0131, meyve aromal\u0131 ve yumu\u015fakt\u0131r. Grenache \u00fcz\u00fcm\u00fcnden \u00fcretilen \u015faraplar oksidasyona meyillidir, ya\u015fland\u0131k\u00e7a daha fazla deri ve katran aromas\u0131 olu\u015fturabilir. Gen\u00e7 \u00f6rneklerinde bile \u015fi\u015fenin kenarlar\u0131nda kahverengile\u015fme olabilir. Asit, tanen ve renk eksikli\u011fine meyilli olan bu \u00fcz\u00fcm cinsi \u015faraba v\u00fccut ve tatl\u0131 meyve aromalar\u0131 vermesi a\u00e7\u0131s\u0131ndan genellikle Syrah, Carignan, Tempranillo ve Cinsault gibi \u00e7e\u015fitlerle harmanlan\u0131r.<\/p>\n\n\n\n<p><strong>Kalecik Karas\u0131:<\/strong> Ad\u0131n\u0131 Ankara\u2019n\u0131n Kalecik il\u00e7esinden alan Orta Anadolu\u2019nun en kaliteli k\u0131rm\u0131z\u0131 \u015farapl\u0131k \u00fcz\u00fcm cinsidir. Bu nadide \u00e7e\u015fit, Ankara\u2019n\u0131n Kalecik il\u00e7esinde az miktarda yeti\u015fiyordu. Kaybolmaya y\u00fcz tuttu\u011fu s\u0131rada ba\u015far\u0131yla canland\u0131r\u0131ld\u0131.  Kalecik\u2019te ve K\u0131r\u015fehir\u2019de \u00fcretiliyor, ayr\u0131ca farkl\u0131 \u00fcreticiler Kalecik Karas\u0131\u2019n\u0131 ba\u015fka b\u00f6lgelere ta\u015f\u0131yarak oralarda da \u00fcretiyorlar. Son y\u0131llarda Denizli platosunda ve Trakya\u2019da da ekilmektedir. \u015earab\u0131 vi\u015fne suyu renginde, meyve aromal\u0131, orta g\u00f6vdeli, d\u00fc\u015f\u00fck asiditli ve az tanenlidir. T\u00fcrkiye\u2019nin en iyi y\u0131llanma potansiyeline sahip \u00fcz\u00fcmlerindendir.<\/p>\n\n\n\n<p><strong>Karalahna:<\/strong> Bozcaada\u2019n\u0131n yerli \u00fcz\u00fcm\u00fcd\u00fcr. Koyu renkli, iri ve s\u0131k taneli, kal\u0131n kabukludur. Bu \u00fcz\u00fcmden yap\u0131lan \u015faraplar g\u00f6vdeli olur. Taneni g\u00fc\u00e7l\u00fcye yak\u0131nd\u0131r, asiditesi azd\u0131r ancak hissedilir.<\/p>\n\n\n\n<p><strong>K\u00f6setevek:<\/strong> Elaz\u0131\u011f\u2019da yeti\u015ftirilen K\u00f6setevek \u00fcz\u00fcm\u00fc, koyu mor renkli, sulu, orta b\u00fcy\u00fckl\u00fckte, s\u0131k ve k\u00fc\u00e7\u00fck tanenli, etli, kabuklu, d\u00fc\u015f\u00fck asitli, koyu renkli ve \u015fekerli olu\u015fundan kaliteli k\u0131rm\u0131z\u0131 \u015farap \u00fcretimi i\u00e7in uygun bir \u00e7e\u015fittir. Genel olarak mono veya \u00d6k\u00fczg\u00f6z\u00fc ile kupaj yap\u0131l\u0131r.<\/p>\n\n\n\n<p><strong>Karasak\u0131z:<\/strong> (Kuntra) \u00c7anakkale ve Bozcaada\u2019da yeti\u015ftirilen, a\u00e7\u0131k k\u0131rm\u0131z\u0131 renkli ve sek \u015farap veren bir \u00fcz\u00fcm t\u00fcr\u00fcd\u00fcr. Kanyak yap\u0131m\u0131nda da kullan\u0131l\u0131r. \u0130\u00e7imi yumu\u015fak ve meyvemsi olan \u015faraplar\u0131n\u0131n asiditesi ve taneni y\u00fcksektir ama ya\u015fland\u0131r\u0131lmaya m\u00fcsait de\u011fildir. K\u0131rm\u0131z\u0131 Bordeaux \u015farab\u0131 kar\u0131\u015f\u0131m\u0131nda izin verilen alt\u0131 \u00fcz\u00fcmden biri olarak bilinir. Malbec \u00fcz\u00fcm\u00fc kal\u0131n kabukludur ve olgunla\u015fmak i\u00e7in Cabernet Sauvignon veya Merlot\u2019tan daha fazla g\u00fcne\u015f ve \u0131s\u0131ya ihtiya\u00e7 duyar. Sezon ortas\u0131nda olgunla\u015f\u0131r ve \u00e7ok derin renk, geni\u015f tanen ve bordo kar\u0131\u015f\u0131mlar\u0131na karma\u015f\u0131kl\u0131k katan erik benzeri bir lezzet bile\u015feni getirebilir, Elmal\u0131da yeti\u015ftirlen \u00fcz\u00fcmlerde \u00e7am notalar\u0131 da al\u0131n\u0131r. D\u00fc\u015f\u00fck verimle \u00fcretilen \u00fcz\u00fcmlerden elde edilen \u015faraplar zengin, koyu ve suludur.<\/p>\n\n\n\n<p><strong>Merlot:<\/strong> K\u00f6keni Fransa olan k\u0131rm\u0131z\u0131 \u00fcz\u00fcm, T\u00fcrkiye\u2019de Ege\u2019de yeti\u015ftiriliyor. \u00dcz\u00fcm t\u00fcr\u00fcne uygun olarak ba\u011flar\u0131n b\u00fcy\u00fck \u00e7o\u011funlu\u011fu g\u00fcneye bakan yama\u00e7 arazilerde yer al\u0131r. Toprak, killi-kire\u00e7li ve ta\u015fl\u0131 olanlardan  tercih edildi\u011fi i\u00e7in meyve aromal\u0131 ve baharatl\u0131 Merlot \u015farab\u0131 k\u0131sa s\u00fcrede olgunluk d\u00fczeyine eri\u015fir. K\u0131rm\u0131z\u0131 \u015farap \u00fcretiminde kullan\u0131lan mavi-siyah renkli bir \u00fcz\u00fcm \u00e7e\u015fididir.
